Dining Earth Week

Earth Day is Tuesday, April 22 and University Dining Services is celebrating with a whole week of activities that we're calling "Earth Week," April 21 through April 25.

Less Food Waste with Trayless Dining Earth Week is a good time to reflect on how we can help reduce our impact on the environment. Did you know that each day in Western’s Dining Halls, customers throw away approximately 1,842 pounds of food? To reduce this food waste, and at the request of the Residence Hall Association (RHA) and the Campus Dining Committee, the Viking Commons, Ridgeway Commons and Fairhaven Commons will be “trayless,” Monday, April 21 - Friday, April 25.

Many college campuses across the nation have been participating in “trayless” dining programs and statistics show that it works to reduce food waste between 30% and 60%. Western’s own Viking Commons reduced waste by 45% when it was trayless for the first seven weeks of Summer Quarter 2007.

University Catering Offers Compostable Service Ware

In honor of Earth Day, and as part of its commitment to sustainability, Western Washington University Catering will offer compostable service ware at no additional cost for catering events held during the month of April.

University Catering clients must mention the April promotion in their order to receive compostable products at their event. The products available include disposable plates and hot cups made from sugarcane, and cold cups and cutlery made from corn. The service ware is from Eco-Products, a Colorado-based sustainable food service products provider.

Dining Earns Gold Ratings in Food Safety

Good as Gold in Food Safety

This March, campus dining halls, markets and cafés were inspected for safety by an independent, third party health and safety organization called NSF International (formerly National Sanitation Foundation). These unannounced inspections are done annually to ensure daily food safety and a safe dining environment for customers, as well as a consistently safe workplace for employees. Viking Commons, Fairhaven Commons and the Viking Union Market & Café each received a “Double Gold” rating, meaning they received perfect 100% scores in both food and physical safety.

According to Chris Kenney, Director of Operations for University Dining Services, “Achieving perfect scores is not an easy task. It’s not just one day of ‘looking good;’ it requires a year-round, day in and day out commitment. Everything has to be spotless, including daily record keeping.”

Vegetarian & Vegan Dining Forum

University Dining Services invites interested students to join in the "Vegetarian & Vegan Forum" on Thursday, April 10th, at 4:00-5:00pm. The purpose of this monthly forum is to provide an opportunity for exchange of ideas and expanded communication, in order to better understand the needs and wants of students who self-identify as vegetarian or vegan.

Excellence in Leadership Scholarships Available

Apply by April 7th!

University Dining Services, in conjunction with the National Residence Hall Honorary group, is sponsoring three $1,500 scholarships for the 2008 - 2009 academic year.

The "Excellence in Leadership Scholarships" will be awarded to undergraduate students who have been actively involved in the residence life system and the university community at large. Applicants must have lived on campus for a minimum of two quarters, and plan to continue living in University Residences during 2008 - 2009. A cumulative GPA of 3.0 or higher, as well as a letter of recommendation from a member of the faculty or staff, is also required.

Thank you to all of the students who responded to our online customer survey during the month of February. We received completed surveys from 961 students. Through a random drawing, the winner of the $100 AS Bookstore Gift Card is freshman Jennifer Scott. Congratulations to Jennifer!

University Dining Services periodically surveys customers about their eating habits, food preferences and customer satisfaction. Customer feedback is also encouraged on a day-to-day basis, by talking with a manager on duty, through an on-site comment card, or via the online comment form.

Red Eye Special for Dead Week & Finals

The special is for a 12 ounce cup of drip coffee or hot tea. This will allow students a chance to refuel for those inevitable late-nighters that accompany the last two weeks of the quarter.

Road Trip USA Dinner on March 5th

University Dining Services is going on a Road Trip! On Wednesday, March 5, the dining halls will be holding a special dinner called Road Trip USA. The dinner will be held at Viking Commons, Fairhaven Commons and Ridgeway Commons from 5:15 to 6:45pm.

Come along for the ride and don’t forget to pack your appetites. We will be making stops in Austin, Miami, Hollywood, New Orleans and New York.

The menu will include plenty of local flavors, such as the following.

Monthly Vegetarian & Vegan Forum Coming Up

On Thursday, February 28th, the second monthly "Vegetarian & Vegan Forum" will be held at Fairhaven Commons' Chart Room, at 4p.m.

In January, University Dining Services held the first "Vegetarian & Vegan Forum" and there was very strong turnout. Special Hours for Presidents Day Weekend

Presidents Day is Monday, February 18th and this is an official holiday for Western Washington University. Due to a decline in expected foot traffic on campus, several dining locations will have special hours in effect over the three day weekend. Valentine’s Day Festivities

Valentine’s Day is right around the corner and University Dining Services is celebrating with two special events on Thursday, February 14th. To kick things off, the three dining halls will be serving a smörgåsbord of Valentine’s Day desserts at dinner on Thursday evening, from 5:15pm - 6:45pm.

    The dessert menu is expected to include:
  • Cakerie Strawberry Shortcake
  • Chocolate Mousse
  • Grasshopper Bars
  • Red Heart Shortbread Cookies w/ Sugar Sprinkles
  • Chocolate Cake w/ White Icing and Heart Sprinkles

If you'd like to eat a main course dinner before diving into dessert, we'll be serving Yankee Pot Roast with mashed potatoes and gravey, Vegan Soft Tacos, and much more.

It’s downright cold outside, and keeping warm is “in.” Right now the Viking Union Market, located on the sixth floor of the Viking Union, is serving hot and fresh chili daily. Everyday, there are two options available, a vegan chili and a meat chili (either beef or chicken). With three serving sizes to choose from, 12 oz., 16oz. or in a bread bowl, this delicious chili can make a great side dish or it can be a whole meal. A complimentary condiment bar features cheese, sour cream and onions is also available. This extensive chili offering will be available for a limited time only, depending on the weather and customer demand.

Munch Money Saves 18.4%

As winter quarter is about to begin, it’s a good time to think about Munch Money. Munch Money is a convenient and money-saving way to pay for food at all campus cafés, markets, and dining halls. WWU students, faculty and staff can create a Munch Money account simply by making a deposit in any amount they choose. The Munch Money program enables those University Dining Services customers to save 18.4 percent on all food purchases.

With a swipe of their Western card, customers paying with Munch Money will receive a 10% discount on their total purchase and will be exempt from 8.4% sales tax. Cash, Credit or Flex Point purchases do not receive these discounts.

Long-time Employee Passes Away

Known for his friendly demeanor, love of music and dedication to great baking, Ken Engel's co-workers and friends are mourning his sudden death this week. Kenneth L. Engel (Ken) worked for 17-years as a baker at Western Washington University Dining Services, and he is greatly missed.

A funeral is being held next week in Wisconsin, where Ken grew up. According to Ken's family, a memorial viewing is scheduled for Wednesday, 12/19, at Ritchay Funeral Home, 1950 – 12th Street S., Wisconsin Rapids, WI 54495. The Funeral Home will then transport any flowers to the nearby United Methodist Church where services are planned for Thursday, 12/20.

Red Eye Special for Dead Week & Finals

University Dining Services’ Red Eye Special starts on Monday, December 3 at on-campus markets and cafes. During Dead Week and Finals, The Atrium, Miller Market, Viking Union Café, The Haven and Tony’s Coffee in Haggard Hall will be serving $.25 coffee or tea after 5 pm. In addition to the unbeatable coffee deal, certain locations will be open extended hours for students. For instance, The Atrium (in Arntzen Hall) will be open until midnight Monday through Thursday of Dead Week, and again Sunday through Wednesday of Finals Week. With comfortable seating and a relaxing atmosphere, The Atrium is an ideal place to crack the books, meet with a group or grab a snack.

Mourning Loss of Team Member, Tye Cruver Funeral

Mourning Loss of Team Member

The University Dining Services team is mourning the loss of a special friend and valued team member. Tye Cruver, 23, grill cook at Fairhaven Commons dining hall, died on Thanksgiving night, November 22nd. On his way to Pullman to spend the holiday with family, Tye was killed in a head-on collision near Ritzville, Washington.

The funeral service is planned for 2 p.m. Saturday, Dec. 1, at St. James Episcopalian Church at 1410 N.E. Stadium Way in Pullman, Washington. Some of Tye's friends in the Bellingham area are working to arrange a local memorial service for those who cannot make the trip to Pullman. More details are pending.

Winners Announced: Western Parents Win Viking Cake

As a part of the introduction of the Viking Cake, parents who visited campus during the recent Fall Family Weekend were encouraged to enter a drawing for a free cake. Seventy-five (75) entries were collected over two days, October 26-27. Three winning entries were randomly selected, and the winners were Jane Wagner, Al Keim and Theresa Mohr. Congratulations!

Each of the winners can order a complimentary Viking Cake from University Catering. The cake will be decorated with a custom message, such as Good Luck, Happy Birthday, Hang In There, or Congratulations. University Catering will package the cake with plates, forks, and napkins, so it's ready for pickup by the student.

Faculty & Staff Dining Area

The faculty-staff lunchtime seating area in Viking Union 464 appears to be somewhat underutilized this quarter. According to Ira Simon, director of University Dining Services, “we believe it may be a lack of awareness more than a lack of need; therefore, we’re putting out new signage and seeking to remind the community that the room is there for them.”

The seating area is open from 11:30am – 1:30pm, Monday-Friday, except on University Holidays and when the Viking Union building is closed.

As Western observes the Veterans Day holiday on Monday, there are several retail dining locations that are closing early today, and many cafes and markets will be closed on Monday, November 12, 2007. Resident Dining Halls will observe a modified meal schedule for Monday, November 12th. On Wednesday night, October 31st, Western's three dining halls will present a Halloween Theme dinner. The entire campus community is welcome to visit Fairhaven Commons, Ridgeway Commons or Viking Commons for this festive event. Rocket Donuts, a locally owned and operated Bellingham business, is partnering with Western Washington University’s Dining Services to serve a delicious selection of tasty sweets. Available to the university community will be an irresistible array of donuts, including mouthwatering maple bars, delicious bismarks and classic raised glazed, along with a selection of muffins, brownies and cinnamon rolls. All together, Dining Services will be offering a selection of nearly 30 different baked goods.

Founded October 21, 2006, down on Holly Street, Rocket Donuts is locally owned and operated. They are highly committed to quality, freshness, and having a good time. Donuts are handmade in the store, which has a retro, 1950’s Sci-Fi theme. Rocket feels that this theme is appropriate, considering the golden age of Mom and Pop donut shops was the 50’s and 60’s. The good old days of local service with a smile are not forgotten at Rocket Donuts.

Munch Money is a convenient way to pay for items at all campus cafés, markets, and resident dining halls. Deadline for Student Job Pre-applications Extended to August 24

University Dining Services has extended the deadline for student job pre-applications to Friday, August 24th.

University Dining Services invites students seeking jobs for the 2007-2008 academic school year to apply for positions ranging from baristas to cooks, cashiers and office assistants.

Applications will be accepted online for over 300 on-campus student positions until August 24. Dining Services employment offers flexible schedules and most positions include an employee meal, redeemable at any campus dining location.

Working with University Dining Services allows students to gain practical and transferable skills while they attend school, as well as the potential for advancement and future career opportunities. Job locations include Viking, Ridgeway and Fairhaven Commons, as well as 10 cafés and markets throughout campus. Entry level student wages will start at $7.93 per hour, with the chance for merit increases and promotions.

A new menu, theme, and set of policies is being unveiled by University Catering at Western Washington University in the spirit of continuing their commitment to outstanding customer service.

The new menu and policies, which took effect July 1, promote creative and diverse new food selections, updated standards and practices at University Catering, and an abiding theme, "simply elegant." The theme illustrates University Catering's effort to promote simple, contemporary, and stylish presentation and service. According to Tim Bartunek, Director of Catering, "our 'Simply Elegant' philosophy is creating a memorable experience for all of our guests, from Casual Catering orders to 500 person plated meals. We want all our guests to feel the sophisticaiton that only a catered event can offer."

Dining Services Welcomes New Students at Summer Orientation Events

Transitions and Summerstart

University Dining Services will welcome incoming students to Western Washington University at the Transitions and Summerstart orientation events being held in July and August. New students and their families will have the opportunity to enjoy a delicious outdoor lunch prepared by campus Catering staff, learn about dining services, win prizes and receive valuable coupons.

These events are part of the day-long orientation sessions presented by New Student Services/Family Outreach, which also include a campus tour, advising, class registration, and an information fair. Transitions, for transfer students, will occur July 6, 13, 20 and Summerstart will take place August 9-11 and 16-18.

Western Washington University Dining Services, with the help of National Residence Hall Honorary, announces the winners of the “Excellence in Leadership” scholarships for 2007 - 2008. Kristin Kowalski, Sara Leister, and Courtney Taylor were selected as recipients in recognition of their participation in residence life and the campus community at large. The $1500 scholarship awards were presented by Ira Simon, University Dining Services Director, and will be applied towards the winners' meal plans.

“I feel like this scholarship is acknowledging all the time and effort I have spent in helping to improve the community of my residence hall,” remarked Kristin Kowalski, a freshman majoring in Psychology.

Twenty-five cent coffee is returning to campus, with the popular “Red Eye Special” featured at all Western cafes and markets during Dead Week and Finals, June 4 – 15. The special is for a 12-ounce cup of drip coffee purchased after 5 pm.

Select locations will be open extended hours to offer a place to study, re-charge, or grab a late-night snack. The Atrium will be open until midnight and Viking Union Cafe until 11 pm June 4 – 7 and 10 – 13. Miller Market will stay open until 8 pm June 4 – 7 and 11 - 13.

University Dining Services, Circle K Raise More than $2,000 to Stop Hunger

University Dining Services and the Western Washington University chapter of Circle K International raised more than $2,000 during the week of May 7 - 11 to benefit the Bellingham Food Bank.

Western students, faculty and staff donated nonperishable food items and cash, as well as Munch Money and Flex Points to be used to purchase frozen food. The effort raised $2028.03, plus more than 150 pounds of canned and dried goods.

Barbecue Lunch Offered May 19 in Lieu of Brunch

Western Washington University students with meal plans can enjoy a spring barbecue lunch on Saturday, May 19 from 11:30a – 1:30p. The barbecue is being held at Wade King Student Recreation Center as part of the Kappa Karnival event. On the same day, Fairhaven and Ridgeway Commons will be closed for brunch, while Viking Commons will remain open. See the Special Hours page.

The barbecue lunch is also open to friends, family and community members for a cost of $7 for those 12 and older, $3.50 for children ages 4 -11 and free for age 3 and under.

A free pasta buffet dinner will be served to all participants in the Relay For Life fundraising event benefiting the American Cancer Society on Saturday, May 19. The meal will be served from 5:00 – 7:00 pm outside the Wade King Student Recreation Center.

University Dining Services is donating the food which will include two types of pasta, green salad with fresh vegetables, breadsticks, fresh baked cookies, bottled water and soft drinks.

University Dining Services and Circle K Partner to Stop Hunger May 7 - 11

Stop Hunger

Although the problems of hunger and malnutrition are visible globally, many of us are not familiar with the impact of these issues in our own community. In a recent survey, 5% of Whatcom County residents reported that they were concerned in the past month with having enough food for their families; 4% had skipped meals due to lack of food, and 1% had skipped meals for an entire day.

To be part of the local solution to this global problem, University Dining Services staff and members of the Western’s Circle K Club are joining together in the annual STOP Hunger food drive and fundraiser. During the week of May 7 – 11, students, faculty and staff can donate cash, Flex Points or Munch Money during dinner at the three dining halls, as well as during mid-day (10a – 3p) at Miller Market, The Atrium and Viking Union Market. Non-perishable food and cash can be donated anytime during regular business hours at all Dining locations on campus.

Credit and Debit Card Charges Delayed at The Atrium

April 24, 2007 -- Credit and debit card purchases made at The Atrium in Arntzen Hall between October and December, 2006, did not appear on customers' monthly statements. This affects all purchases within the Atrium's formats, including Pizza Hut, Sub Connection, Pasta Plus, Freshens, and Starbucks, as well as grab-and-go items, beverages, and snacks. The affected debit and credit card transactions are currently being posted to customer accounts.

University Dining Services apologizes for the inconvenience and concern this may cause to our customers. We resolved the malfunction as soon as we became aware of it. All customer account information is secure, and accounts will not be double charged.

Recycle Mugs: Save Money and Save the Earth!

Earth Day

April 20, 2007 -- Western Washington University students, faculty and staff can save 780 trees, 7 swimming pools full of water, and enough energy to supply 6.5 homes for a year by using Recycle Mugs instead of disposable cups. In honor of Earth Day, University Dining Services (UDS) is promoting its Recycle Mug, which sells for just $1.99 in all cafés and markets on campus. Students, faculty and staff are encouraged to reuse the mug; any refill of drip coffee or soda is just 99 cents. Colorful, lightweight and easy to use, the mug easily fits in a backpack or book bag. February 19th, 2007 -- Due to scheduling conflicts, the popular new faculty-staff lunchtime seating area in Viking Union 464 will be closed on Tuesday, February 27 and Friday, March 16. The seating area is generally open from 11:30am - 1:30pm on all other weekdays during winter quarter.

Unveiled for the first time on January 10, the lunch area was developed in response to requests from faculty and staff members for space to interact and collaborate. In addition, more seating during the noon hour in Viking Union has eased crowding.

Viking Union 464 has a comfortable atmosphere. Diners can bring a sack lunch or pick up food-to-go at Viking Union Market (VU, 6th floor), Viking Union Cafe (VU, 6th floor) or the Underground Coffeehouse (VU, 3rd floor).

Instead, the Ridgeway Dining staff will present a lasagna dinner buffet at the Wade Student Recreation Center, in conjunction with the "Culture Shock" event also happening at the Student Recreation Center that evening.

Colombian Chef Warms up Winter with Visit to Campus

February 19th, 2007 -- Western Washington University Dining Services will welcome Executive Chef Joaquin Suarez from Bogota, Colombia to campus as part of a global exchange program, February 26 - March 2, 2007. Suarez will participate in an international chef residency in the United States during which he will share traditional South American cuisine with Western's culinary teams, students, faculty and staff.

Students Win Cache of Hidden Treasure!

October 19, 2006 -- The three lucky winners of University Dining Services' treasure map contest were announced today, according to Lisa North, Director of Business Development. During the contest, initiated the first week of fall quarter, students followed a map to eight cafes and markets on campus. At each location they received a free item and their treasure map was stamped. Once all locations were visited, students could submit the map to be entered in the Grand Prize drawing for one of three prizes.

The winners are: Sarah Dahlke, who received a $100 credit at the AS Bookstore, Max Bohnson, who won $100 in Munch Money, and Sara Wahlin, who was the recipient of a $100 gift certificate to Haggen.

Home Grown Wheat to Sprout in our Backyard

Home Grown Wheat

October 19, 2006 -- You may soon see amber waves of grain growing on campus. This unlikely sight will be courtesy of Shepherd's Grain farms in eastern Washington, in partnership with Western's Office of Sustainability. The partners will work together to plant a test garden in a 10 x 10 plot near Fairhaven College.

Fred Fleming, a fourth generation farmer in Reardan, Washington, is a pioneer. In the 1970's he began experimenting with an innovative new method of farming that conserves soil and prevents erosion. It is called "no-til" farming or "direct seeding." Fleming eventually developed a cooperative of farms called Columbia Plateau Producers, which uses this method to produce flour sold under the Shepherd's Grain label.

Fleming described the merits of direct seeding practice to a group of interested students, faculty and staff at "the Outback" yesterday. "The Outback" is five acres of land nestled between Fairhaven and Buchanan Towers residence halls.

The purpose of the initial test plot is to see if Shepherd's Grain wheat varieties can be grown successfully in our habitat. The wetter climate west of the mountains will provide a challenge. Seeds will be planted in the next few weeks, with traditional farming techniques employed. Harvest will occur in nine to ten months. If the first phase is successful, a test plot will follow utilizing direct-seeding.

Champion Distributing in Portland, one of University Dining Services' bread suppliers, uses Shepherd's Grain flour exclusively for bread production for Western Washington University. Shepherd's Grain farms are certified by Food Alliance for adhering to and promoting sustainable farming practices.

"Direct seeding" is to today's farmer what the invention of the tractor was to our grandfathers," says Fleming. In addition to preventing soil erosion, no-till farming conserves fuel, reduces exhaust, and produces more organic matter, making for a more nutritious product. While respecting organic farming, Fleming believes that his practices are better for the environment because organic production relies on tillage.

Imagine some day, having Western students grow all the wheat required to produce the flour it needs, and protecting the soil in the process. Now that's sustainability!

Treasure Hunters Find Tasty Treats from Start to Finish

September 25, 2006 -- Student sleuths are on the hunt for tasty treasure as they zig-zag across campus sampling free goodies at University Dining Services' (UDS) many cafes and markets. Free coffee, soft serve yogurt, bagels, fruit, cookies and cake are just some of the delectable treasures that await those who participate in the University Dining Services Treasure Hunt through October 5th.

Pick up a Treasure Map from the UDS exhibit at the AS Information Fair (on Red Square) on September 25-26. Students as well as faculty, staff and administrators can follow the trail of special offers, have their map stamped at each location, and enter a prize drawing once all the location stamps are collected. Three "grand" prizes, each valued at $100, will be awarded after the promotion ends on October 5. Grand prize winners will be drawn from all eligible, completed Treasure Maps submitted.

The Treasure Hunt is a fun way for the campus community to learn about the various retail dining options available at WWU. The Viking Union Café and Market, The Underground Coffeehouse, Miller Market, Rock's Edge Café, Tony's Coffee at Haggard Hall, The Haven Market and The Atrium at Arntzen Hall are all participating. Those who didn't pickup a Treasure Map at the Info Fair, can find one at any of the participating locations, while supplies last.

More Than $2000 Raised to Help STOP Hunger

Poker Walk: A Fun, Free Campus-Wide Event May 11th

Join University Dining Services and Campus Recreation on May 11th for our annual Poker Walk. Please pre-register, or register on the day of at one of the starting points. Start the walk at the north end of campus (Viking Union Market) or at the south end of campus (The Haven Market, at Fairhaven College). All walkers conclude at the Wade King Student Recreation Center.

Poker Walk 2006 is a free, campus-wide fitness event where participants travel to five different on-campus dining locations to collect poker chips (from 11:30am 12:45pm). The poker chips can then be taken to the Wade King Student Recreation Center and traded for playing cards (12:45 1:00pm). The best 5-card poker hand wins a prize. Prizes include a one quarter membership to the Student Recreation Center, a free fitness class, a casual catering event and many other fun prizes. Participants can play as an individual or as a team. Poker Walk is open to Faculty, Staff, and Students of WWU.

A very big thanks goes out to everyone who helped make this year's Giving Tree program a big success. Every year University Dining Services puts on a program to help the needy families of our community. In all of our Resident Dining Halls and most Cafés & Markets, Giving Trees have been put up and they have been decorated with gift tags. Each tag has the age and gender of a child in need of a holiday present. Anybody may take a tag and purchase a present for that child. The gift can then be brought, unwrapped with the gift tag attached, to The Atrium, Miller Market, Viking Union Market, or any Resident Dining Hall by the Thursday of finals week, December 8th. University Dining Services will then take your presents to the Salvation Army to be wrapped and delivered to the needy families of this community. Fairhaven After Dark

Every Monday through Thursday night Fairhaven Commons serves a late night meal from 10:30 p.m. to Midnight.* Meal plans are accepted as well as Flex Points, Munch Money and cash. Basic offerings include items such as eggs, potatoes and breakfast meat as well as grill items such as cheeseburgers and French Fries. There is also a continental bar with yogurts, fruit and cottage cheese as well as cereal, toast and beverage items. Other items, such as milkshakes and personal pizzas made-to-order will be available for a $2.99 additional charge.

Come to Fairhaven After Dark to study or to socialize. The Chart Room will be reserved as a quite study room for those students wanting to study and snack. The Courtyard Room will be available for conversation and noise with soft-seating and a large screen TV.
